Hurry Up & Slow Down

I’m not sure how it happened…. the last 3 weeks of pregnancy lasted for what seemed like eternity and now the first three weeks of baby life has flown by like the blink of an eye.

Life with three kids is changing me.  Life has a new pace, a  “hurry up and wait”, a “hurry up and slow down,” pace.  I have all the time in the world and not enough time for anything.  I’ve had approximately 1 (completed) phone conversation in the last 3 weeks and I have a whole “pile” of drafted, unfinished, emails that I don’t think I’ll ever complete.

We’re settling into a bit of a routine, although I’m quickly remembering how having a newborn means plans are always subject to change.  A trip to the grocery store can be postponed for the sake of a hungry baby- even if the rest of the crew is loaded up and ready to go.  Grocery shopping can quickly come to an end if the littlest person in our crew decides he hates the grocery store.  We gladly bend to his needs- that’s what I’m trying to say.

And, in the midst of our new routine, the time comes when we (I) have a break– that pile of emails and the phone calls and the unfinished projects are trumped by one precious five letter word….

A New Kind of Crazy

So… my life has turned into a new kind of crazy.

Three kids (1 newborn) + life demands + summer + major lack of sleep + only one me = not a lot of time. 

I know I’ll find a new groove and eventually this will turn into “normal” life, but for now there isn’t a whole lot of normal going on.  This little newborn of ours requires quite a lot of attention and when I’m not giving attention to him, the older two need their mama.  So… I’m here to say Cowgirl Clippings will be the first to suffer as I figure out our new routine.  Posting will be much more sporadic and not nearly as reliable as it’s been over the last couple of years.  BUT you’ll notice the new “Current Feature” on the homepage– all designed to help you, our readers, out.  When you check in here at CC you’ll know if there’s a new post simply by looking at the Current Feature.  You don’t need to go scrolling around trying to find something new- if it’s new it’ll be the Current Feature.  Okey dokey?

It’s been a little quiet around here at CC this week….  Cooper William decided to make his grand arrival on Tuesday, June 5th.  We are super crazy about him and enjoying every minute!

Julie’s Favorite Applesauce Cake

I don’t know who this “Julie” gal is, but I like love her taste in cake!  This fabulous,  fragrant cake is moist and rich, loaded with flavor and easy to make.  And the frosting!! That alone is reason enough to make this cake….One friend, after enjoying a piece of cake, asked for the recipe……..for the frosting ONLY! :-)

Cream butter; gradually add sugar, beating well at medium speed of electric mixer.  Add eggs, one at a time, beating well after each addition.

Combine flour and next 6 ingredients; add to creamed mixture alternately with applesauce, beginning and ending with flour mixture.  Mix after each addition.  Stir in raisins and nuts.

Pour batter into a greased and floured 9 x 13 -inch baking pan.  Bake at 325 degrees for 65 – 70 minutes or until a wooden pick inserted in the center comes out clean (check after 60 minutes).  Let cool completely in pan on a wire rack.  Spread Easy Caramel Frosting on top of cake.

Easy Caramel Frosting

Combine brown sugar, butter, and salt in a saucepan; bring to a boil over medium heat, stirring constantly.  Add milk; cook over low heat 3 minutes, stirring occasionally.  Remove from heat, and let cool.  Add powdered sugar, and beat with a wooden spoon to almost spreading consistency.  Yield:  1 1/3 cups
