Yogurt Quandries

Our friends, Luke and Callie, have two Jersey milk cows, Elsie and Milky. Elsie recently calved…..

She is producing plenty, so thanks to her overabundance, we’ve been blessed with fresh milk. Lucy calls it “calf milk” and prefers it over “store milk” because it’s “what the calves dwink.”
Callie is quite the gal and manages to make cheese and all sorts of yummy milk products. This week she brought me some yogurt she made from Elsie’s milk. It is wonderful. It’s “plain” yogurt, but not like store plain. It’s really creamy and has a nice little tartness to it. The girls have had some, but mostly I’ve been hoarding it for myself, eating it for breakfast.
Now I’m thinking I really want to get a yogurt maker. Callie bought her Yogotherm here: www.dairyconnection.com. I can make yogurt even when Elsie isn’t providing for our milk needs and it tastes so much better than store bought! I wonder if any of you have experience in this department? Do you make yogurt? Have you considered it? Are you ready to jump into this yogurt-making adventure with me? I’ll keep you posted on what develops. In the meantime, tell us what you know!

I don’t know anything yet so I will be looking in anticipation for posts on the matter. Someday I hope to have my own milk cow and then will be be joining the ranks of yogurt makers everywhere. It’s hard to beat farm fresh milk, love it and hope to be drinking more of it soon.

The only experience I’ve had in making yogurt was in my college biology class where we made some. But I would love to make all the stuff you talked about, yogurt, cheese, butter, but we need a cow or supply of some sort. Maybe when the kids get a little older :)

Hello! We also have a Jersey milk cow, Lily May, and I have experimented making yogurt several times. I bought a yogurt maker from Hoegger Supply and followed a recipe that came with the maker. I’ve made it using Nancy’s Yogurt as my starter, and I’ve used the packet yogurt starter – couldn’t tell a difference between the two. We enjoyed adding fruit to it and found it quite tasty but slightly different textured (runny) than what we’re used to buying at the store. I also make mozzarella and ricotta cheese from excess milk and it makes delicious lasagne. It’s not hard but is somewhat time-consuming to make the mozzarella. My friend gets milk from us and makes feta cheese with cow’s milk and packs it in oliver oil with garlic and herbs. It is so delicious! Very fun to have access to fresh milk. Enjoy!
